Chicken Burgers

Looking to mix up your burger routine and add in something a little leaner? Why not try ground chicken instead? With a few add-ins from your local farmers’ market you can ramp up the flavor AND the taste, plus let the red meat have its rest day.

Early summer is a wonderful time to visit your local farmers’ market. The early crops are starting to come in and everyone is eager to get their hands on fresh, local produce once again. It’s a great time for greens, radishes, and onions, so a salad is a no-brainer. But if you want to use that start-of-season bounty in another way these chicken burgers are a great way to go. Plain ground chicken (or turkey) needs a little love, honestly, and no one wants to just add a bunch of salt – enter the market! Using a few simple ingredients I picked up this week gave my chicken just the flavor boost I was looking for. P.S. These would be great to make ahead as part of your weekly meal prep.

Mix together: (*All ingredients can be modified for individual taste.)

1 lb. ground chicken (or turkey)

3 T. cilantro, chopped

2 T. jalapeno, finely chopped

4 green onions, finely sliced

1/3 c. microgreens (or finely chopped spinach)

S & P, garlic powder to taste while grilling

Form into 4 patties and grill. Be sure that chicken is cooked through before serving. ENJOY this clean and tasty dish! We had them tonight with broccoli and beets with feta. A PERFECT summer dinner.
